Raw Zucchini “Alfredo” Salad
Fettuccine Alfredo is tasty and rich, but heavy to boot. Try this version where nutritional yeast and avocado replace cheese sauce and spiralized zuccini is swapped in for pasta. Don't forget the Italian classics: tomato, basil, and garlic, of course! This quick and easy meal will satisfy your pasta itch, but you keep you feeling light.

Ingredients
  • 2 Medium Zucchini spiralized or grated on large setting*
  • 1 cup Tomato chopped
  • 1/2 Avacodo ripe
  • 1/4 cup Hemp Seeds
  • 1/4 cup Nutritional Yeast
  • 1/4 cup Pumpkin Seeds
  • 2 Tbsp basil dried
  • 2 Tbsp olive oil
  • 2 Tbsp water filtered
  • 1/2 tsp Black Pepper coarse
  • 1/2 tsp Garlic Powder
  • Dash of Salt

Instructions
  1. In a small bowl, combine hemp seeds, nutritional yeast, olive oil, water, basil, garlic powder, salt and pepper. Mash in the avocado until smooth. Toss zucchini in dressing, and top with pumpkin seeds and sliced tomato. Enjoy!
