Sweet Potato Hash with Apple and Goat Cheese
If you're like me, any time you see the words "sweet potato" on a menu, you get excited. Sweet potatoes are a fantastic — and more healthful — alternative to white potatoes in all kinds of contexts. In this case, a medium-diced sweet potato hash works great with apples and earthy herbs. The deep colors and rich tastes are perfect for fall!

Sweet Potato Hash with Apple and Goat Cheese
If you're like me, any time you see the words "sweet potato" on a menu, you get excited. Sweet potatoes are a fantastic — and more healthful — alternative to white potatoes in all kinds of contexts. In this case, a medium-diced sweet potato hash works great with apples and earthy herbs. The deep colors and rich tastes are perfect for fall!

Ingredients
  • 2 lbs Sweet Potatoes peeled, medium dice, use a variety of colors*
  • 1 Onion medium, small diced
  • 1 lb Apples with some skin, medium dice**
  • 1/2 lb carrots peeled, small dice
  • 2 ribs Celery small dice
  • 1 clove Garlic minced
  • 1 Tbsp Mixed Fresh or Dried Herbs parsley, sage, rosemary, or any earthy herbs you like
  • 1 tsp red pepper flakes
  • 3-4 Tbsp olive oil
  • Salt & Pepper to taste
  • goat cheese for topping***

Instructions
  1. Heat oven to 400. Toss sweet potatoes with 1 tbsp olive oil, herbs, red pepper flakes, salt and pepper. Bake on a sheet pan for 12-15 mins, until slightly under cooked. Cool to room temperature.
  2. In a large sauté pan over medium high heat, add one tbsp olive oil and onions. Sauté until you start to see color and add sweet potatoes. Sauté for about 4 minutes, stirring gently and shaking the pan every so often. Here you want to achieve some caramelization on the potatoes. Add a bit of oil if needed.
  3. Add celery, carrots and garlic to pan, season with salt and pepper and toss together. Cook for an additional 3-4 minutes. Remove from heat to a warm serving dish and leave slightly covered while you cook apples.
  4. Over medium high heat, add 1 tsp oil and apples. Cook about 5 minutes until apples get a bit of sear, but not mushy. Add to sweet potato mix and toss.
  5. Toss together and serve hot. Top with crumbled goat cheese.

*When choosing your potatoes, the darker the skin color, the more nutrients for you!
