Sweet Potato Hash with Apple and Goat Cheese
If you're like me, any time you see the words "sweet potato" on a menu, you get excited. Sweet potatoes are a fantastic — and more healthful — alternative to white potatoes in all kinds of contexts. In this case, a medium-diced sweet potato hash works great with apples and earthy herbs. The deep colors and rich tastes are perfect for fall!

In this case, a medium-diced sweet potato hash works great with apples and earthy herbs. The deep colors and rich tastes are perfect for fall!

Ingredients
- 2 lbs Sweet Potatoes peeled, medium dice, use a variety of colors*
- 1 Onion medium, small diced
- 1 lb Apples with some skin, medium dice**
- 1/2 lb carrots peeled, small dice
- 2 ribs Celery small dice
- 1 clove Garlic minced
- 1 Tbsp Mixed Fresh or Dried Herbs parsley, sage, rosemary, or any earthy herbs you like
- 1 tsp red pepper flakes
- 3-4 Tbsp olive oil
- Salt & Pepper to taste
- goat cheese for topping***

Instructions
- Heat oven to 400. Toss sweet potatoes with 1 tbsp olive oil, herbs, red pepper flakes, salt and pepper. Bake on a sheet pan for 12-15 mins, until slightly under cooked. Cool to room temperature.
- In a large sauté pan over medium high heat, add one tbsp olive oil and onions. Sauté until you start to see color and add sweet potatoes. Sauté for about 4 minutes, stirring gently and shaking the pan every so often. Here you want to achieve some caramelization on the potatoes. Add a bit of oil if needed.
- Add celery, carrots and garlic to pan, season with salt and pepper and toss together. Cook for an additional 3-4 minutes. Remove from heat to a warm serving dish and leave slightly covered while you cook apples.
- Over medium high heat, add 1 tsp oil and apples. Cook about 5 minutes until apples get a bit of sear, but not mushy. Add to sweet potato mix and toss.
- Toss together and serve hot. Top with crumbled goat cheese.
