“Hello Fall” Butternut Squash
Butternut Squash with Apples, Cinnamon, and Ghost Pepper Salt... hello, fall. Fall-harvest squashes like the butternut are low in fat and high in fiber, making them a great seasonal staple. This hourglass gourd also provides potassium (good for healthy bones), vitamin B6 (supports immune and nervous system), and antioxidants (anti-inflammatory). All that, and it's tasty too!

Ingredients
- 1 medium butternut squash
- 1 Tbsp extra virgin olive oil
- 1 small white onion
- 1 medium apple organic
- 2 giant handfuls kale organic
- 1 Tbsp cinnamon
- 1/2 tsp ghost pepper salt (or to taste)
- 1/4 cup dry toasted pecan pieces
- 1 tsp ghee (or olive oil)
- 2 sprigs fresh oregano

Instructions
- Preheat the oven to 350 degrees F.
- Wash, dry, and slice a butternut squash in half, lengthwise.
- Scoop out the seeds and toss (or wash and dry, to toast or plant!)
- Bake squash halves face-down in a baking dish with 1/2" water, for 45-60 min or until skin is tender.
- While the squash is cooking, heat 1 Tbsp olive oil in a frying pan (on medium-low).
- Rough chop the onion and sauté until translucent.
- Dice an apple and toss with onion.
- Tear kale into bite-sized pieces and place on top of the apple-onion-oil mixture, allowing to wilt.
- Stir in cinnamon, ghost pepper, and pecans.
- Top with ghee or drizzle with olive oil, stir, and remove from heat.
- Sprinkle with more cinnamon and/or ghost pepper, to taste.
- Serve atop the butternut squash halves, garnish with fresh oregano, and dig in!

This recipe was created by Allison and tested on her anti-squash husband, who (after making a cameo in this photo) claimed it tasted "like candy!"
Look for Ghost Pepper Salt at Savory Spice Shop... and enjoy carefully! It's delicious, but hot!
