Ingredients
For the Fish
  • Whole Snapper
  • 2 gallons frying oil
Fish Sauce
  • 3 shallots
  • 4 thai chilies
  • 1 cup lime juice
For the Rice
  • 1 cup Carolina Gold Rice
  • 3 tablespoons Butter
  • 1 bay leaf
  • 2 sprigs Thyme
  • 2 gallons water
Servings: person
Instructions
  1. For the rice, bring the 2 gallons of water to a boil and cook rice in pasta method until 90% cooked.
  2. Remove rice from water and cool.
  3. For the sauce, slice the shallots and chilies thinly and immerse in fish sauce and fresh squeezed lime juice.
  4. For the fish, fry in 350°F oil whole until fully cooked — usually 6 minutes.
