Creamy Massaged Kale Salad with Fruit and Pistachio Topper

Ingredients
  • 6 Cups Red Cabbage cored and thinly sliced
  • 8 Cups Curly Kale de-stemmed, thinly sliced
  • 1 1/2 Cup carrot peeled and grated
  • 3/4 Cup Onion minced
  • 3/4 Cup Raw Cashews
  • 3/4 Cup Raw Sunflower Seeds
  • 1/2 Cup water
  • 1/4 Cup olive oil extra virgin
  • 1 1/2 Tbsp olive oil extra virgin
  • 2 1/2 tsp maple syrup
  • 1 Cup Radishes sliced thin
  • 1.5 Cup Apples cored and chopped
  • 1 Cup cranberries dried
  • 1 1/2 tsp. coconut sugar
  • 1/2 tsp. sea salt
  • 1 Tbsp lemon juice
  • 1/2 Cup Pistacios whole, toasted

Instructions
  1. Combine kale and cabbage in a large bowl. Set aside.
  2. Puree cashews, sunflower seeds, water, apple cider vinegar, mustard, olive oil, maple syrup and salt in a blender until very smooth, scraping down sides with a spatula as needed. Pour over kale/cabbage mixture and using gloved hands, massage salad until greens wilt and are thoroughly dressed.
  3. Stir in carrot, onion & celery seed. Plate in the center of a platter and set aside.
  4. Combine radishes, apples, cranberries, sugar, salt and lemon juice, tossing thoroughly to coat. Transfer to top of kale/cabbage mixture with a slotted spoon. Sprinkle pistachios over the top of the fruit mixture and serve.
